Malatya, a province in Eastern Turkey, is home to a unique variety of apricots. While there are hundreds of apricot cultivars grown globally, Malatya apricots stand out due to their distinctive features. They can be sun-dried and pitted without being cut in half, making them the only cultivar that can be referred to as "whole pitted." The process of pitting these apricots is incredibly labor-intensive, with each fruit being hand-pitted one by one during the harvest and drying period. Despite the unbelievable effort required to produce them, Malatya apricots are highly valued for their exceptional taste and texture.

According to historical research, the vine has been grown in the Mediterranean area for over 5,500 years, dating back to 3500 BC. Initially, it was mainly cultivated for the production of wine. However, archaeological evidence reveals that grapes were extensively grown throughout Anatolia. The grape varieties known as Thompson Seedless and Sultanas (or Sultanina) are interchangeable terms. In the United States, the name Thompson Seedless is commonly used, whereas in Turkey, the name Sultana is preferred. The terms "raisin" and "sultana" are used to distinguish between the two drying methods of grapes.

Turkey is the leading global producer of dried figs, with a 60% share of the market. The local cultivar of dried figs grown in the Aydın and İzmir provinces of the Aegean region of Turkey is called Sarılop, which has been cultivated for thousands of years. These figs were historically referred to as Smyrna figs, named after the ancient city of Izmir. In 2016, the European Commission granted Protected Designation of Origin (PDO) status to Turkish figs, registered as "Aydin Inciri" (Aydin Figs). This was due to the recent shift in the majority of production to the Aydin province.
